Welcome to Baer Bros. Maple Camp. We are grateful to be able to share our sugar making with you as well as our delicious Pure Pennsylvania Maple Syrup and confections! Our tradition of making maple syrup begins with the Baer family and friends as they gathered each spring to boil sap into a sweet maple syrup. The process continues on with the Lynch family and their friends as they gather each year for the sweet maple harvest. Join us, at the sugar camp to see the actual process during maple season each year. It is a great experience for all!
Our maple syrup is made much as it was done for the past hundred years on the farms in our area. Each spring around February as the weather turns towards thawing, we head into our sugar woods to tap our maple trees for the sap that will eventually become our maple syrup. There are over 4000 taps or holes drilled into sugar maple and red maple trees in our sugarbush and nearby farms. Many the trees have been tapped for decades. In the past there were as many as 3-4000 keelers (buckets) hanging on our trees gathered by hand. Tanks pulled by horses and later farm tractors hauled the sap to the camp. Today we utilize a piping system to bring all of the sap to a central location for hauling. The sap collected from our trees is boiled over a wood fire, boiling away huge amounts of water resulting in the tasty syrup that everyone loves. It takes approximately 45-60 gallons of sap from our trees to make one gallon of maple syrup.
Friends and neighbors assist us as we feed our wood fire to keep boiling off the syrup. In order to save energy in the form of the wood we burn while boiling we mix in some new technology, reverse osmosis. Through this process we remove approximately 75% of the water from the sap before we boil it into syrup. Our maple syrup is boiled, filtered and stored so that we can share our maple syrup and products throughout the year. Each barrel is sampled and graded so that we can offer a variety of maple whether you like a lighter or darker maple product. Our grade A medium syrup is great to top off pancakes, waffle, French toast, and even ice cream. Our darker amber syrups and grade B have a stronger maple flavor and are used as table syrup, sugar substitute and as sweeteners. It can also be used as part of the Lemon Aide diet, In addition to maple syrup we make maple candies, maple crumb sugar, and many happy times throughout the season from February through March, one of us can be found making sugar in the old kettle on Sunday afternoons just as it has been done each year in the past by the Baer and the Beabes families. We are proud to continue and enjoy this unique farming tradition while working along side our family and friends.
